Краффины
Расчет на 6 небольших краффинов (диаметр 10 см, высота 12 см)
ВАМ ПОНАДОБЯТСЯ
Опара:
300 мл молока (1,2 стакана объемом 250 мл)
20 г сахара (1 ст. л.)
5 г сухих дрожжей (или 15 г прессованных)
150 г муки (1 стакан объемом 250 мл)
Тесто для краффинов:
100 г сахара (4 ст. л. с горкой)
500 г муки (3 стакана объемом 250 мл)
Начинка:
200 г синего изюма (можно заменить любыми сухофруктам)
орехи (предварительно обжаренные, без шелухи)
мак (не замачиваем, используем сухой)

КАК ЭТО ПРИГОТОВИТЬ
Приготовьте опару.
1. Соедините дрожжи с мукой, перемешайте.
Если сухие дрожжи, то смешиваем их с мукой. если прессованные дрожжи, растворяем их в теплом молоке (температура молока не выше 40 градусов)
2. В слегка теплое молоко добавьте сахар и муку с дрожжами. Перемешайте до однородности.
3. Накройте полотенцем и уберите в теплое место.
Приготовьте тесто для краффинов.
1. Смешайте яйца с сахаром, солью. Перемешайте.
3. Просейте муку через сито, добавьте размягченное сливочное масло.
5. Переложите тесто в миску, накройте полотенцем, уберите в теплое место на 1 час.
6. Разделите на 6 равных частей.
7. Сформируйте шарики, накройте их пищевой пленкой.
8. Процедите изюм, слейте сироп.
9. Раскатайте тесто в прямоугольник, размером примерно 30х40 см, толщиной 3 мм.
10. Промажьте поверхность теста размягченным сливочным маслом.
11. Выпекайте в формах при температуре 180С 30-35 минут.
Приготовьте сироп.
1. Смешайте горячую воду и сахар либо в сотейнике, либо в миске. Перемешайте, растворите сахар.
2. Промойте изюм или сухофрукты.
3. После того, как остыл сироп, добавьте изюм (сухофрукты).
4. Отставьте в сторону на несколько часов.
Сформируйте краффины.
1. С изюмом (любыми сухофруктами), замоченными предварительно в сиропе.
2. С маком (мак предварительно НЕ замачиваем).
3. С орехами, предварительно прожаренными в духовке, без шелухи.
4. С шоколадными дропсами (термостабильный).
После того, как краффины остыли, задекорируйте их сахарной пудрой.
